Herbs : descriptionMost of the aromatic herbs used in Provence ! Cooking recipes grow wild in the garrigues. Indeed, thyme ("tarigoule"), rosemary, wild thyme, fennel and oregano grow just about everywhere in the hills and along the countly paths. Other herbs, such as hyssop, sage, savory, bay and tarragon are more difficult to find in nature but are cultivated locally. The use of aromatic herbs is a fine art, providing a great variety of dishes with expert doses of different herbs, from spicy to subtle.
Besides their culinary uses, many of these herbs have medicinal properties. They go into the making of pharmaceutical preparations and herbal teas of various sorts. According to a Provencal saying 'sage in the garden keeps the doctor away': Aromatic herbs are used to flavour several well known liqueurs, particularly those made by the monks at Saint-Michel-de-Frigolet (in Bouches du Rhone) or Aiguebelle (in Drome). |
